Buffalo Chicken Lettuce Wraps

This week as I was trying to think of something new and healthy to have for dinner (other than just the usual salad). I came up with these buffalo and chicken lettuce wraps. They were super easy to make and delicious…especially if you like spicy food. I could easily see this at a tailgate or football party. I even made homemade ranch dressing so it would be really fresh and healthier compared to the one in the bottle (my husband’s favorite).

Ingredients:

2 chicken breasts

1/2 cup of Frank’s hot sauce or whatever your preference may be

1.5 Tablespoon of butter

1 head/bag of Romaine lettuce hearts

1/2 cup of Parmesan cheese

*You can use blue cheese crumbles on top instead of parmesan if a preference! 

Ranch Dressing

Directions:

First I took two raw chicken breasts and placed them in a pan. I poured 1/2 cup of FRANK’S HOT SAUCE and 1.5 Tablespoons of butter (cut and placed randomly on the chicken).

I baked the chicken covered with tinfoil in the oven for 1 hour on 350 degrees.

Once done, I used two forks to shred the chicken and tossed it in the sauce in the pan. I allowed the chicken to absorb sauce as I prepped the lettuce and dressing.

I used Romaine hearts for the “lettuce wraps”. Romaine is perfectly structured in the center which created the perfect place for the shredded chicken to go. After adding the chicken to the lettuce, I grated fresh parmesan cheese followed by some drizzles of my homemade ranch dressing.

Feel free to add more hot sauce if you like more heat! These definitely hit the spot that night for dinner, although I did have to make a separate piece of chicken for Brody. I will always have this recipe in my mind as back up for any of those nights when we want something different and easy. It is a light meal so if you need a side I would suggest rice or potato rounds.
