Grilled Romaine Caesar Salad

When I was pregnant I wanted Caesar salad so bad but couldn’t have it due to the raw egg and fish that’s usually in it…So it resulted to me researching recipes and coming up with this one. Yep. I wanted Caesar salad that bad! Can all you pregnant ladies relate!? Once I had set my mind to something that sounded so good I had to have it! This dressing  recipe is eggless and fish less Caesar dressing. After making it when pregnant, we still create it because it’s so good and easy to make. The romaine lettuce on the grill brushed with olive oil and salt and pepper really makes this dish. When we have people over for dinner it definitely catches them off guard when they see me go outside with the lettuce. There is just something about the grilled romaine with the dressing that really makes it stand out. The best part is that it is super easy to recreate! I like to use my food processor when making the dressing or if you only have a blender use that instead.

Salad Ingredients:

Romaine Lettuce- 10 leaves

Olive Oil-1/4 cup

Salt and Pepper

Ingredients for Dressing:

Mayo- 2 Tablespoons

Lemon- 1 1/2 lemons

Dijon mustard- 2 teaspoons

Garlic- 2-3 cloves, minced

Olive Oil- 3/4 cup

Parmesan cheese- 1/3 cup

Directions:


Add mayo, lemon, mustard, garlic and a pinch of salt and pepper in food processor or blender and blend well.


Then add the olive oil slowly while blending on low. Add the cheese at the end and pulse around 8 times to blend well in mix. Store in fridge to chill.


That’s Marla Tip: use my ziplock trick by putting some dressing into the bag and cutting small corner off to serve over lettuce to make pretty lines.


Romaine Lettuce:


Break apart the hearts.


Brush with olive oil and sprinkle salt and pepper over them and place on grill on low.


Cook for 2 minutes on each side or maybe a tad longer depending on heat. You want them about 70% soft with the middle a tad hard to still have a little crunch. You want them to look like this:

Serve with homemade dressing and Enjoy!
