Whenever Summer hits, Luke starts to beg for this salad. It’s so simple and is full of fresh veggies and avocado. It has become on of the staples to have in the fridge to snack on during the summer. He adds ranch dressing to his but I usually stick to plain or I will create a dressing. (much more healthier than that ranch stuff…) I included my avaocado dressing below with this salad. I love to grab fresh vegetables and corn from the farmers market to mix in. Always up for supporting local farmers! Here is what I normally have in ours:
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1/2 red onion, chopped
2 corn on the cob, shucked and sliced off into pieces
1 big tomato, chopped (or you can half cherry tomatoes)
1-2 avocados, peeled and pitted, chopped (I will only put one in if I am going to use my avocado dressing with it)
Combine in bowl, chill in fridge. Try to chopped everything in the same size (except onion will be smaller) to make it easier to eat.
*Add ranch dressing OR go healither with this dressing:
1 avocado, peeled and pitted
1/2 a lemon or more according to preference
1/4 cup of plain yogurt
1/2 teaspoon garlic powder
1/4 cup of EVOO (extra virgin olive oil)
Salt and pepper to taste.
Mix well in blender. Enjoy!
